Instructions to make Carrot Rice:
- Cook the rice and let it cool completely. - - 2. Meanwhile heat 1 tbsp of ghee in kadai add fennel seeds, cashews. Roast till cashews change to golden brown. - - 3. Now add thinly sliced onion, minced green chilli, curry leaves. Saute a bit.
- Now add grated carrot, turmeric powder, hing, salt. Saute nicely. - - 5. Add graram masala saute a bit. Now add cooked rice to this. Mix thoroughly. Adjust salt. - - 6. Garnish with coriander leaves. Serve hot with any chips.
