  1. To make the filling: mix coconut sugar/palm sugar, water and vanilla extract in a pan over low heat. Cook until the sugar dissolved and thicken like syrup. Add the grated coconut and salt into the sugar syrup and continue cooking on low heat until the coconut filling is thick and glossy.
  2. The Pancake skin: sift the flour and salt into mixing bowl, pour in egg, coconut milk, water and mix all until well incorporated. Make sure it’s smooth batter and no lumps.
  3. Add in pandan extract and oil, mix well and allow the batter to sit for 15-20 minutes.
  4. Heat a medium skillet over medium heat (make sure the skillet sufficiently hot).
  5. Stir the batter, take 1/4 cup and pour onto the skillet, spread it until covered with thin layer. Cook until lightly browned.
  6. Turn the pancake out onto tray, repeat the process with the remaining batter.
  7. Place a spoonful of the coconut filling in the center of each pancake, fold both sides towards the middle over the filling and roll the pancake up.
  8. Now it’s ready to dish with a cup of hot tea / coffee your choice!
